Summary: The reactions of plants peroxidases with different classes of organic compounds (styryl derivatives of heteroaromatic N-oxides, phenols and anilines) are investigated using the method of electronic spectroscopy. The variations of spectrum during oxidation by enzyme depending on the structure of a substrate are discussed. N-Oxide 4-(4’-dimethylaminostyryl) pyridine is proposed as a convenient standard for the determination of peroxidase activity.
